Easy Sugar Cookies
1 package (17.5 oz) sugar cookie mix
4 oz. cream cheese, softened
1 cup flour
1 tsp. vanilla or lemon extract (the lemon gives the cookies a really bright taste)
2 eggs
1 tbsp grated lemon zest (optional but yummy)
Preheat oven to 350*. Mix sugar cookie mix and cream cheese until a dough begins to form. Add flour in 3 parts, mixing after each addition. Add eggs and extract and mix just until incorporated. Fold in lemon zest, if using. On lightly floured surface, working with ¼ of the dough at a time, roll out dough and cut into desired shapes. Place one inch apart on parchment paper covered cookie sheet. Bake for 10 to 12 minutes.
