Honey Corn Bread or Corn Muffins

Servings: 

12 muffins

Ingredients: 

1 cup Corn Meal

1 cup all purpose flour

1/2 cup sugar

1 tablespoon baking powder


1 teaspoon salt
1 cup milk

2 large eggs, beaten

1/2 stick unsalted butter, melted

1/4 teaspoon vanilla

1/4 cup honey

Instructions: 

  1. Preheat oven: 400 degrees
  2. In a bowl, combine corn meal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, eggs, melted butter, vanilla, and honey until well blended.
  4. Combine the wet and dry ingredients and stir until just blended.
  5. Corn Bread: Pour batter into 8x8 greased pan. 
  6. Bake 20-25 minutes or until golden brown.
  7. Corn Muffins: Pour batter in greased or 
  8. lined muffin tins, filling about 2/3 full. 
  9. Bake for 13-17 minutes or until golden brown.

Double recipe
