CATHEDRAL WINDOW COOKIES


12 squares graham cracker crushed (you will also need to crush More for rolling logs in at the end)
1/2 cup semi-sweet chocolate chips
3/4 cup butter
1 egg
2 tablespoons milk
1/2 bag colored marshmallows
1 cup powdered sugar
1/4 tsp salt
2 tsp. vanilla extract
1½ cup chopped walnuts (optional)
Put graham cracker crumbs on a large plate and set aside.

Put chocolate chips and butter into a small pot and cook over low heat, stirring constantly, until completely smooth, set aside. Beat together salt, milk, vanilla, and egg in a large bowl then add powdered sugar. Add chocolate mixture and stir. Fold in walnuts (if using) and marshmallows. Add the 12 crushed graham crackers, and mix again. Chill until you can form into logs.

Moisten your hands with water, then form one-third of the chocolate mixture into a 10"-long log. Gently roll log in additional crushed graham cracker crumbs to coat all over. Transfer log to a large piece of wax paper, roll up tightly, and twist ends like a party favor. Set aside and repeat process with remaining chocolate mixture and graham cracker crumbs.

Refrigerate candy logs until completely firm, about 4 hours, in aluminum foil.
